1. Quinoa Salad
Ingredients:
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can chickpeas, drained and rinsed
- 1 bell pepper, chopped
- 1/2 red onion, chopped
- 1/2 cup corn kernels
- 1/2 cup chopped fresh parsley
- 1/2 cup crumbled feta cheese
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions:
1. In a pot, bring quinoa and vegetable broth to a boil. Reduce heat to low and simmer until quinoa is tender, about 15-20 minutes. Fluff with a fork and let cool.
2. In a large bowl, combine cooked quinoa with chickpeas, bell pepper, red onion, corn, parsley, and feta cheese.
3. In a small bowl, whisk together olive oil, red wine vinegar, honey, Dijon mustard, salt, and pepper until well combined.
4. Pour dressing over quinoa salad and toss to combine. Chill in the fridge for 30 minutes before serving.
2. Veggie Stir-Fry with Tofu
Ingredients:
- 1 block of firm tofu, cut into cubes
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1 cup sliced mushrooms
- 1/2 cup diced onion
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 tbsp soy sauce
- Salt and pepper to taste
Instructions:
1. In a large skillet, heat olive oil over medium-high heat.
2. Add tofu and cook until browned, about 5 minutes.
3. Add onion and garlic, and cook for another 2-3 minutes until fragrant.
4. Add broccoli, bell peppers, and mushrooms, and cook until tender-crisp, about 5-7 minutes.
5. Add soy sauce, salt, and pepper to taste.
6. Serve over brown rice
